    Understanding the different Cuts of Pork

    Pork has been the most widely eaten meat in the world for the longest time, and still is today. Six million years ago, the first pigs began in Europe and a few other places in the world. About 8,000 years ago pigs became very common to man. Pigs were brought to North America on ships in the 1500’s from England and Spain and by different colonists. They were first hunted in the forests for meat, then in the 1940's, pigs began to be raised by farmers.

    Pigs now are a very important part of our modern society. Today, pigs are responsible not only for food but for other products such as hair brushes, insulin, skin for burn victims, and heart valves. A market hog weighs about 220 lbs. to 260 lbs and is raised mostly for meat.

    Pork is suited for a variety of cooking methods. Pork Chops may be cooked by grilling, pan frying, broiling, baking and/or roasting. Ribs are great roasted, baked or grilled. Cooking ribs very slowly will produce the most tender and flavorful results. The tenderloin is considered to be the most tender and best cut of pork.
